Roasted Pear Salad with Brats

Roasted Pear Salad & Brats

INGREDIENTS

2 large, ripe Anjou or Bartlett pears
1 tablespoons unsalted butter, melted
2 tablespoons Honey
1/2 cup crumbled blue cheese
Fresh thyme springs for garnish
4 cups Arugula
1/4 c. Recipe of Lemon Caesar Vinaigrette
2 - 4 Grilled Bratwurst


DIRECTIONS

1. Cut the pears in half, lengthwise, leaving the stem intact.

2. Remove the core from each half of the pear.

3. Trim the rounded portion of each pear, so the lay flat on the grill (without rocking).

4. In a bowl, mix the melted butter & honey.

5. Brush the honey mixture over the cut surface of the pears.

6. Sprinkle the pears with the crumbled blue cheese.

7. Set the pears on the grill. Cover and roast for 12 -15 minutes, or until the pears are scorched around the edges and the cheese has melted.

8. Garnish with thyme springs and serve alongside mixed greens, tossed with Lemon Caesar Vinaigrette, and Bratwurst.


Lemon Caesar Vinaigrette

Lemon Caesar Vinaigrette

INGREDIENTS

2/3 c. extra- virgin olive oil
3 tablespoons fresh lemon juice
2 tablespoons anchovy paste
1 tablespoon white wine vinegar
1 tablespoon grated lemon zest
1 garlic clove, minced


DIRECTIONS


1. Combine all ingredients in a small bowl.

2. Add to a Vitamin or Food processor until full blended.

3. Store in the refrigerator for up to 1 week.

Yields: 1 cup

Apple Topping

Apples:

Ingredients:

2 sliced apples
1 tablespoon butter
1 tablespoon sugar
1 tablespoon brown sugar
1 teaspoon corn starch
1 tablespoon water
1/2 teaspoon cinnamon
Sprinkle of allspice

Directions:

1. Melt butter in pan.

2. Add all the other ingredients to the pan (except apples), mix well.

3. Add apples

4. Cook until the apples are soft.

True Belgian Waffles

Ingredients:

2 c. all purpose flour
3/4 c. sugar
3-1/2 teaspoons baking powder
2 eggs separated
1-1/2 c. milk
1 c. butter melted
1 teaspoon vanilla extract

Directions:

1. In a bowl, combine flour, sugar and baking powder.

2. In another bowl, lightly beat egg yolks.

3. Add milkbutter, and vanilla, to the beaten egg yolks; mix well.

4. Stir into dry ingredients just until combined.

5. Beat egg whites until stiff peaks form; fold into batter.

6. Bake in a preheated waffle iron until golden brown.

7. Add toppings and syrup.


Yield: 10 Waffles


Simple Southern Cornbread

Simple Southern Cornbread

INGREDIENTS

2 boxes Jiffy Cornbread mix
1 can creamed corn
2 eggs
1/4 c. sugar

DIRECTIONS:
 
1. Preheat oven to 425 degrees F.
2. Grease the pans
3. Mix together ingredients.

4. Cook for in oven (see below for the amount of time depending on size), until a toothpick comes out clean.

Time: 8x8 ~ 30-35 min
          muffins ~ 15 min
